Whenever I go home to visit my family, my mom makes this delicious cowboy caviar before dinner, and inevitably, I eat too much and don’t have room for much else. It’s so good. I use carrot sticks as scoops and pile some on top, or chips work well too, if you want more of a treat. I’m taking this to a Superbowl party today, and I know it will disappear. I wish I knew who to give proper credit for this recipe to, but it has been modified through so many people before it reached me that I just have to give it to my mom.
It is preferable to make this 24 hours in advance, so it can marinate in the flavor of the dressing. If you don’t get around to it, it still tastes great.
1 can 15 oz. black eyed peas drained and rinsed
1 can(11 oz I use frozen) white corn drained
2 avocados, diced
2/3 cup chopped fresh tomatoes
2/3 cup chopped green onions
2/3 cup chopped fresh cilantro
1/4-1/2 cup olive oil
1/4 cup red wine vinegar
2 cloves chopped garlic
1 tsp cumin
salt and pepper to taste
Combine and mix all together. Enjoy!!
